Spicy Moroccan vegetable sishebo

Nothing unites a family quite like a lekker meal filled with goodness and nutrients, but it can often be difficult to get just the right balance of flavours in order to create a tasty meal. Zesty, juicy Moroccan flavours meet spicy, fiery South African ones in this yummy balance of chickpeas, vegetables and spices, creating yet another Perfect Sishebo moment.

 Ingredients:

1 medium onion, chopped

3 gloves of garlic, minced

1 medium red chilli, chopped

4 cups of vegetable broth

3 cups of any kind of chopped vegetables (we recommend sweet potatoes, parsnips and zucchini)

1 can of chickpeas, drained

2 medium carrots, peeled and chopped

½ a cup of minced parsley

2 medium potatoes, peeled and chopped

A little bit of oil, for browning

Salt and pepper, to taste

Harissa

Method:

1.)    Heat the oil in a medium-sized pot and then brown the onions.

2.)    Once the onions are brown, add the garlic and chilli.

3.)    Once the onions, garlic and chilli are all soft, add all of the vegetables and the chickpeas.

4.)    Stir in the vegetable stock and reduce heat. Allow it to simmer uncovered for about 10 minutes.

5.)    Add the parsley to the mixture, then cover and allow simmering for a further 20 minutes.

6.)    Add salt and pepper to taste.

Serve this sishebo with rice, pap, vetkoek or couscous and a side of harissa.
